In order to eliminate this situation, our government pays great attention to folk medicine. As a result, there is a growing demand for natural compounds extracted from plants. Medicines made from substances extracted from natural compounds are different from synthetic drugs due to their low toxicity, compatibility with living organisms and specific activity. Nowadays, the study of natural compounds with high biological activity, Obtaining modified drugs based on them is one of the important tasks of today.
One such plant is the amaranth plant. There are 10 species of this plant growing in Uzbekistan. As an ornamental species of the plant, mullein is widespread. Amaranth leaves contain up to 30 percent protein and 270-350 mg/kg of keratin. They contain riboflavin and vitamins. The main biological compounds found in amaranth are proteins, are fats, carbohydrates, vitamins and minerals. The protein content of amaranth seeds (18%) is higher than that of traditional cereals and varies depending on the variety of the plant, climate and soil conditions and fertilization method. The starch content of amaranth seeds is about 45-65%. An important group of compounds found in amaranth is the fiber fraction (high level), its soluble (mainly pectins) and insoluble fractions. The insoluble fraction consists of lignin, cellulose and hemicelluloses, which have a beneficial effect on the digestive system. %.

Amaranth seeds have a high nutritional value. The most important product obtained from amaranth is grain, which is a source of flour used in the baking industry. Amaranth seeds are mainly used for the production of flour, cereals and oil. Therefore, products with amaranth seeds are recommended for people with symptoms of anemia. Amaranth oil additionally helps to lower blood pressure and is also used to normalize glucose levels. Also, the plant can be used for heavy menstruation, skin problems such as acne and eczema, and as a self-wash for severe mouth pain.
Scientific literature contains information about amaranth’s beneficial effect on the cardiovascular and nervous system, antimicrobial activity, and antioxidant activity.
